Healthy and Delicious Chicken Fingers Recipe

I hardly ever post recipes, well this is the second one. Even though my cooking concoctions often get complimented, I dont' necessarily enjoy cooking. I do cook because I believe in healthy living, so good nutritious meals are a must. The recipes I usually make have to be quick (the less time I spend in the kitchen the better), healthy and approved by my kids, at least by the majority of my children. I came across this particular recipe while waiting in the doctor's office and leafing through a variety of parenting magazines. I contemplated stealing the magazine (can't remember what it was) for a moment, but then felt ashamed by my thoughts and tried to memorize the recipe instead. I couldn't remember all the details, but enough to make something yummy and loved by my children. It's one of my favorite recipes - it's not labor intensive, quick to make and not only delicious straight out of the oven, but also very good the next day eaten cold. Most importantly, it's good for you and my children love it. I present you with Yummy Chicken Fingers.


Ingredients:
- About one cup whole grain unsweetened cereal, crushed ( I usually use Wheat-Fulls)
- About half a cup of grated Parmesan cheese, or any other cheese you like
- About 2 tablespoons ground flaxseeds
- 1/2 teaspoon sea salt
- 1 cup milk
- 1 pound chicken tenders, or boneless skinless chicken breasts/thighs cut into 1-inch strips
- Optional: chopped up fresh basil or parsley

Method:
1. Preheat oven to 400. Spray baking sheet with cooking spray or use aluminum sheets.

2. Mix cereal, flaxseeds, cheese, salt, basil (if using) in a shallow mixing bowl.

3. Pour milk into a separate container. Dip chicken tenders/strips in milk, then coat with cereal mixture. Place chicken tenders/strips onto a baking sheet.

4. Bake chicken for about 20 minutes or until no longer pink inside. Enjoy!


Yum! They are crisp outside, soft inside and were gobbled up before I could take proper pictures. :) Enjoy!

  2. Yummy Olga! that look so delicious. I shall try to make them. I used to make the chicken coated with corn flakes, but the cheese is a magnificent add.
